Creamy Chicken & Chunky Mushroom Low Carb Soup
Treat yourself with this lush creamy soup that fits great in a low carb way of eating 🙂
Serving: 6
Ingredients
- 400g chicken tenderloin fillets, cubed
- 10 mushroom cups, chunky cut
- 1 x 400ml can coconut cream
- 1 heaped tablespoon of minced garlic
- 2 tsp Himalayan salt
- 2/3 cup sliced green onions/shallots
- 300ml cooking cream
Instructions
- Combine chicken, mushrooms, coconut cream, garlic and salt in slow cooker
- Cook on low for 4hrs and 30mins
- Add green onions/shallots and cooking cream
- Cook on low a further 30mins
Notes
- Great low carb soup
- Does not taste like coconut
- Cooking cream is a type of cream that resists splitting over heat

Yummy! This is the second week in a row I have made it for work lunches. Seems to freeze okay too, looks split until heated then is fine. I would say it has a mild coconut flavour. Will certainly be making it again!!

This was an absolute winner, I normally have leftovers for the next days lunch, but hubby ate it all lol
Very tasty for simple ingredients. Can only just taste a very very slight hint of coconut. Next time I make it I will do a double batch & cut some of the mushrooms smaller so it’s a bit thicker consistency.
Could you blend it all so it was smooth and thick ?
