Cheesy Mushroom, Bacon & Onion Eggy Breakfast Slice

Ingredients
 

  • 8 eggs
  • 1 cup grated tasty cheese
  • 2 large mushrooms diced
  • 1/2 cup diced onion
  • 125g diced bacon

Instructions
 

  • Spray a silicone flan case with cooking spray (or line your slow cooker directly with baking paper and spray if not using a case to cook in)
  • Spread 1/2 cup of cheese on bottom of silicone flan case (or paper) so that when the cooked slice is inverted onto serving plate the cheese is on top
  • Whisk eggs in a bowl
  • Add diced bacon, diced onion, diced mushroom and the remaining 1/2 cup of cheese and combine
  • Pour this mix into flan case (or onto paper)
  • Cook using The Tea Towel Trick for 1hr 15mins on HIGH or until egg is cooked through solid in your slow cooker
  • Invert onto plate and slice to serve

  1. Made this for a quick lunch with friends, it was beautiful! Just lined the SC with baking paper. Don’t just keep it for breakfast!

  2. Holy Guacamole!!! This is A-MAY-ZING!!! Took a bit longer than stated to cook, but hey! Every slow-cooker is different. I’m even going to count out the calories next time so I don’t have to label it a ‘sometimes food’. Love it!!!!
