Cauliflower Bacon and Camembert Soup

Perfect winter warmer or for serving at a dinner party

Ingredients
 

  • 1 head of cauliflower cut up
  • 4 slices bacon diced up
  • 1 leek chopped
  • 1 circle of Camembert I removed skin
  • Garlic salt and pepper
  • 500ml Milk
  • 500ml Chicken stock

Instructions
 

  • Place all ingredients into slow cooker in order of recipe
  • Cook on high for 2 hours , then blitz and serve with extra crispy bacon and crouton
  • Can also be cooked for 4hrs on low

  1. Thanks Jayne. I really enjoyed this. I find I needed an extra hours cooking time on high,. Which is probably just my sc. I stuck to the recipe. I I’ll do this again, double the recipe and also add garlic.

  4. Overall nice soup. I used skim milk and added 1tsp minced garlic. Cooked 4h low then 2h high. Blitzed & served with crusty bread roll. Dont be deceived by its appearance it is a taste sensation. ?

  5. Made this yesterday. Delicious! Very thick so thinned it out with a bit of water. Added garlic but otherwise stuck to recipe. Took longer than the recipe said. Maybe my SC is a bit slow!

  6. Made this today with Zero Lactosr Anchor Milk. Amazing doesn’t describe how yummy this is. I blitzed it. What a hit. Can’t wait to make it again.

  7. Made this tonight with some slight variations. Added 3 tbsp of garlic. 1L of chicken stock. And Gorgonzola instead of Camembert. Blitzed with crusty bread was AMAZING!!

  8. Made this yesterday I added 1 tablespoon of minced garlic then kept to the recipe. It took longer to cook than stated in the recipe could be my sc It was really good but I found it very rich next time I will use less Camembert

  11. This was a huge hit in our house! I used a little diced ham as garnish instead of using bacon in the soup, evaporated milk instead of ordinary milk and added garlic and fresh mixed herbs. A smooth, creamy delightful soup that everyone loved.

  13. Divine. I didnt have any leek so I left that ingredient out. This tasted better than any soup Ive eaten at any restaurant!! Im hiding it so I dont have to share??

  14. I have made this soup 5 times in the last 3 weeks (twice without the camenbert as I didn’t have any. I added a splash of worcestershire sauce instead those times). I use 1 litre chicken stock and only a splash of milk.
    It is safe to say it has quickly become a favourite in our house and amongst several of my friends who have asked for the recipe. I cook it about 3.5 hours on high (6.5 lt slow cooker) before blitzing.

  15. Made this soup last Winter, minus the bacon due to a pork intolerance. Can confirm it was absolutely delicious. Refrigerated well – I think we were eating portions for about a week!

  16. Really enjoyed this! Very tasty! I think next time I’ll leave the bacon out and just serve it with crispy bacon bits as I thought blitzing the bacon made the texture a bit strange. Loved it though and will definitely be making it again soon.

    I changes the milk for cream and added 2 tsp of minced garlic, i will definitely be making this again. Nothing beats home made soup ??

  18. A soup full of flavour and very filling. Perfect for a main meal. I did freeze and didn’t loose taste or texture.

  19. Made this over weekend omg yummy, added bit of extra garlic forgot to put crispy bacon on top . Grand kids ate and enjoyed so did rest of family. Very thick so will thin a little bit with milk next serving

  21. Made this soup and it was delicious. Full of flavour and simple to make. Smelled amazing while it was cooking.
    Plenty of leftovers to freeze for work lunches.
    Will definitely be making this again.

  23. I love this recipe although I mostly use it as a guide. I often replace the leek with brown onion and the camembert with tasty cheese, all depends what I have at hand. Always a great, tasty soup though.

  25. I wasn’t real sure about this , but gave it a go anyway . I’d ran out of Camembert so used Triple Brie instead . A perfect substitute.
    It was really nice . The crispy bacon bits on top really made it .

  28. Made this yesterday, absolutely loved it. I used light milk to keep the calories down a bit. Might add some more garlic and bacon to it next time.

  29. Saw this this morning. I had all the ingredients minus the Leek which I substituted with white onion. Sounded different, interesting and nice so decided to give it a go. Since I added double the volume of stock I thickened it up with potato. So yum. Was given the tick of approval from the spousal one. Tasty, filling and one to repeat. I also cooked it on high for about 3.5hrs before blending it.

Stumbled across this recipe and immediately loved the idea and so did the misses, I did add SPECK to the recipe along with bacon as it has awesome flavor, also I added onion along with the leak as I love onions oh yeah I did add garlic as love that too. We both loved the dish as I did not blitz it but the misses wants the next one blitzed. Thanks Paulene

  32. I recently made this but substituted the cauliflower for broccoli as it is much cheaper at the moment. It was delicious and both of my children demolished it. Very filling 🙂

  33. Made this using two small broccoli instead. Added two teaspoons of crushed garlic. Blended until very smooth. It was delicious.

    Cooked this on low for 4hr and then it needed more time – so another 2.5hr on high. Blitzed with stick blender.
    Served with croutons (didn’t have extra bacon) for serving. It is very creamy and the Camembert gives it a unique flavour. Very nice.

    We love the flavours.
    Made it several times now, and have tweaked a little

    I use a smoked hock instead of the bacon (remove near end of cooking time, take meat off, discard bones, and (we like it) added chunky, after the rest is blitzed

    I also peel and chop a couple of potatoes, to slightly thicken consistency

    I add 1 Litre of chicken stock

    I don’t add milk, but instead add some cooking cream, or sour cream, while blitzing

    Made this recently and it was delicious! I used a 280g wheel of Camembert chopped up into wedges and left the rind on. When the soup was cooked I skimmed the rind out, it had “ melted “ off so very easy to do.
    In addition I added a heaped teaspoon of Dijon mustard ( previously suggested by another reviewer).
