Carbonara Chicken Meatball Subs

Creamy chicken carbonara meatballs! Perfect to serve on subs or alternatively with the vegetables of your choice. Kids can even help you make them!

Ingredients
 

  • 500g chicken mince
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 tsp cracked black pepper
  • 1/2 tsp salt
  • 2 tsp minced garlic
  • 1/2 cup panko breadcrumbs
  • 1 bottle of your favourited pre made carbonara sauce

Instructions
 

  • Combine all ingredients (except the carbonara sauce) in a large bowl to make the meatballs
  • After washing hands leave them wet as it makes rolling easier and less messy for your hands
  • Roll into small gold ball sized meatballs - approx 20
  • Pour the carbonara sauce into your slow cooker
  • Gently place meatballs in sauce
  • Cover usingThe Tea Towel Trick and cook on low for 3hrs
  • Do NOT stir or move the meatballs until the last hour to be ensure they are firm and formed to be sure they do not fall apart. Disturbing them before before they are cooked will break them.
  • Serve on sub bread rolls for an easy meatball sub dinner
  • Alternatively serve with fresh vegetables of your choice

  1. Assembled meatballs Christmas eve and had as entree for the non seafood lovers for Christmas lunch and everyone loved it even 20 month old.Definately on favourites list

  2. So yummy! I followed the exact recipe, but next time I’d love to add some grated carrot and zucchini for that hidden veg. Served on rolls, would be perfect over pasta also!

  3. Oh my Lordy lord! Yummy! When my toddler likes it then it deserves 6 ??!!!! I didn’t have the specific dried herbs but used whatever I had in the spice rack ( mixed Italian herbs). I see this as a regular meal.

Just a little update for anyone interested… I did cook it on low in my K Mart triple station slow cooker today for 6 hours, and despite the sauce being a little burned around edges, they still tasted great and made amazing rolls. Very, very fast dinner..! Will definitely try again; I might leave tea towel off next time though as my sauce was almost gone after 6 hours and I added a little boiling water back in to make it saucy again. Served on rolls with baby spinach and cheese ??

    Yum, yum and yum! This is my new favourite meatball recipe. The meatballs are so delicious in the carbonara sauce. I doubled all recipe ingredients and added some onion flakes to the meatball mix which made 40 meatball and cooked on high for 2hrs then put a tea towel under sc lid and cooked for another 30 mins on high, We served on hotdog rolls for a quick and tasty weekday dinner.
