Brownie Bliss Bombs

Take a decadent chocolate brownie, add a biscuit layer, then add a fudge layer and you have the ever so lush slow cooker Brownie Bliss Bombs!

Ingredients
 

Brownie Ingredients

  • 1 cup plain flour
  • 1/2 tsp baking powder
  • 2 cups sugar
  • 200g butter softened
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 4 eggs

Fudge Ingredients

  • 500g of milk chocolate
  • 1 tbs butter
  • 1 tbs vanilla essence
  • 1 x 395gm can condensed milk

Biscuits

  • 8 Tim Tam Biscuits
  • You can vary this with any biscuit of your choice really! Other options could include Kingston's, Oreo's, Mint Slice, Delta Cream, Choc Ripple ... really any sweet biscuit that you like!

Instructions
 

Cook Brownie

  • Combine all brownie ingredients in a large mixing bowl and mix well to combine
  • Line slow cooker with non stick baking paper (I used a 7L Breville Slow Cooker)
  • Pour brownie batter into lined slow cooker, cover with tea towel for the Tea Towel Trick
  • Cook on high for approx 1hr 20m - 1hr 30m
  • Cooking time will vary between slow cookers but just use a skewer to test
  • When skewer inserted into brownie comes out clean and it bounces back lightly to touch it's ready

Cook fudge

  • While your brownie is cooking use a second slow cooker to make your fudge. I use my 1.5L slow cooker for fudge. If you have only one cooker the brownie can be cooked first then it can sit cooling while you make the fudge, that's ok too 🙂
  • Place all fudge ingredients into slow cooker, cook on low - lid off - for 90mins.
  • Stir every 15mins or so using a metal spoon to stir.

Assemble

  • While fudge is cooking place Tim Tams (or biscuit of choice) into a bag or bowl and crush to chunky crumble.
  • Lay brownie in a large tray (I use a biscuit oven tray)
  • Sprinkle crushed Tim Tams over brownie base
  • When fudge is cooked pour fudge over the top of the biscuit topped brownie
  • Smooth fudge to cover brownie - being careful not to pick up the biscuit pieces as you do but to only smooth/spread the top of fudge
  • Place in fridge to set. I leave mine overnight but approx 4hrs should set it also.
  • When set use a sharp knife and work fast to cut into pieces
  • Store in fridge
  • Eat and enjoy with a big smile on your face 🙂
