A filling slow cooked soup

Ingredients
 

  • 1kg beef
  • 3large carrots
  • 2onions
  • 3 sticks celery
  • 4large potatoes diced
  • 1 cup pearl barley
  • 4 cloves of garlic
  • 2 tsp thyme
  • 1 400g tin chopped tomatoes
  • Beef broth

Instructions
 

  • Brown of the beef
  • Add all dry ingredients to sc
  • Pour enough broth to cover
  • Cook On high for 4 hours or till meat tender

    Wow, what a yum soup. Instead of mince, I used diced oyster blade steak, and it was like having a Campbell’s Chunky Soup. So full of flavor but with less salt. I am very glad to have another soup recipe. I was getting sick of having the same old pumpkin or chicken soup.

  3. Hi for how much beef broth I made enough to cover all ingredients, you can always add more later if you need to.

    Made this a couple of times now, had forgotten how good barley is! Both times used blade steak and was so tender!
    I substituted sweet potato for white potatoes, added swede and what a winner, more of a stew than soup is my preference so don’t add extra liquid

    This was absolutely delicious! I also added a tsp of Tarragon and a baked sweet potato ? (cooked in my Air Fryer) and just mixed through at the end ? five ?? s

    First time making this recipe. Hubby went back for seconds. He gave it a 10/10. Full of deliciousness.
    I used gravy beef for good rich flavour. And cooked in my Sunbeam 5.5L sc. cooked it on low for 8 hours.
