Saucy Summer Chicken
A lovely fresh chicken dish with the goodness of spinach and the juicy bursts of cherry tomatoes to perfectly compliment the chicken. We served ours with steamed broccolini and sweet potato mash
Serving: 5
Ingredients
- 1kg chicken thigh fillets
- 1 x 420g can condensed cream of chicken soup
- ½ cup tomato sauce
- 2Tblsp Worcestershire sauce
- ½ tsp each of salt and cracked black pepper
- 1 x 250g punnet cherry tomatoes
- 60g baby spinach
- 1Tblsp corn flour mixed with 2T tap water
Instructions
- Add raw chicken fillets to slow cooker
- Combine soup, sauces, salt and pepper and pour over
- Cook on low for 4hrs low
- Add tomatoes and continue to cook for additional 30mins
- Combine corn flour and water to slurry and stir through to thicken
- Add spinach and allow extra 10mins for spinach to wilt then serve

Made this for the first time yesterday and it was delicious! I used a mixture of thigh and breast and everything was cooked perfectly. Served on rice. Will definately be making this again.
What could you use instead of condensed chicken soup? I can’t have onions.

The tomato sauce is sauce (like ketchup) not paste

Tried this for the first time tonight. It was so easy to put together, and while it tasted lovely, I felt it needed a little more oomph. My husband enjoyed it. We served it with rice tonight, I might try it with mashed potatoes tomorrow night…

This is one of my favourite dishes. I make it often. Even my fussy child eats it. So good with mashed potatoes.
Delicious. Just loved the gravy – the mashed potato went well with it. Will be a regular meal – and it was so easy to put together. I forgot to add I used Cream of Celery Soup, but they are all of a muchness, so next time I will try the asparagus 🙂
Love this recipe. So simple and quick. It’s one of my camping dinners because of the simplicity. I love the colours too and with the tomatoes and spinach, it only needs rice to serve. Of course you could add other veg to serve but it’s not needed if you want a simple meal. Love it!
This recipe was so easy. I did halve all the ingredients. Also threw in some mushrooms and a little chilli. Husband was so impressed.
Served with potato. Next time will have it with pasta or rice as there was loads of gravy. Loving these SC recipes. 👌🏼. They really have given me so much confidence to try anything.

I was looking for something different and found this beauty. Great for summer, so fresh and the family loved it. I added onion, carrot and zucchini and served with sweet potato. Next time I would only use 1 tab of worstershire sauce. Another winning recipe.

just eating this now it is very saucey fresh and delicious. I added x veg and I only had 600 grm chook but is amazing with mash x
