Apple cinnamon tea cake (from scratch)

Ingredients
 

  • 1 Granny Smith Apple (peeled cored and sliced and soak in lemon juice)
  • 60g butter
  • 1 egg
  • 1/2 cup milk
  • 1/2 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 1/2 cup caster sugar
  • 1 cup SR flour
  • Cinnamon sugar for sprinkling (Optional)

Instructions
 

  • Peel core and slice Apple and soak in lemon juice and set aside.
  • Combine butter and sugar in mixer.
  • Add egg, vanilla essence, and cinnamon. Mix until combined.
  • Add flour and milk alternately while mixing until all combined.
  • Pour mixture into buttered and floured slow cooker insert.
  • Push Apple slices into top anyway you like (unless very thin, they will sink to the middle anyway)
  • I added a sprinkle of cinnamon sugar over the top.
  • Pop tea towel under lid.
  • Cook on high for 1 1/2 - 2 hours until skewer comes out of the centre clean.

Notes

  • Turn slow cooker every half hour to avoid burning (1.5L slow cookers have a hot spot)
  • To make non stick coating for slow cooker insert (cake comes out easier and isn't wrinkly like with baking paper) Rub the slow cooker insert with margarine/spread on some paper towel, then coat with some flour. Tip out excess flour and set slow cooker aside.

    Can I ask please what do you mean by turning the slow cooker? Is it the whole ting or the insert? I know this sounds dumb ?

      It’s not at all dumb to ask anything you aren’t sure of 🙂
      These are done in a 1.5L slow cooker which is a round bowl.
      Often they can get a hot spot on one side … so turning the cooking bowl around occasionally moves the cake around that hot spot rather than staying on it and getting burnt in one spot 🙂

    Do you think this would work ok with whole meal flour and almond milk? And instead of sugar some honey? Sorry for silly questions but trying to make things a bit healthier in the house

      I think the flour and milk variations should work
      Not certain on the honey since it’s adding extra moisture to the cake
      You could swap sugar for splenda?
      If you do try the swaps let us know anyway 🙂

      Caster sugar is a fine sugar used in baking
      SR flour is self raising flour

      I don’t see why not .. you’ll just need to adjust cooking time
      Though in a larger cooker it may not be as high a mix so may still cook similar time 🙂

    Sounds lovely- I cannot see HONEY anywhere in the Ingredients. Would this work using a Packet Cake mix and adding the cinnamon & Apple ?

  9. I made this today (adjusted to make it diabetic friendly for hubby) .. substituted margarine for butter, used sugar substitute & wholemeal flour .. was very moist & tasty ?.. found the cinnamon a bit strong so will use less next

  12. This was the first thing I tried in my baby slowcooker. Tasty and moist, however I need to be a little more careful getting it out of the bowl lol
    I added some melted butter and cinnamon and sugar on top once it was cooked.

  13. Lovely cake I used apples from my tree that I had partly cooked and frozen a few months ago. Added sultanas too and it is thoroughly enjoyable!

    Lovely. First thing i did in 1.5 slow cooker. Use gf ordinary flour with 2 tsp baking powder. Loved it..needed to shake flour out better oops.. will defo do again

    First thing i made in my new wee slow cooker. Used gluten free ordinary flower and 2 tsp baking powder. Was wonderful…going on my treat list.

    the recipe was very easy and nice but sadly my little beast of a SC (1.5L) has a large hot spot and gave one side of the cake a rather heavy tan (bit crunchy and a tad dark) still was good to taste
    P.S. used Royal Gala instead of Granny Smith apples

      Hi Rodney, the 1.5L often does have a hot spot so this is easily overcome by spinning the inner bowl occasionally during cooking so that hot spot is dispersed around the cake 🙂
