Baileys Chocolate Fudge

Total Time 1 hour 35 minutes

Ingredients
 

  • 800g Chocolate
  • 1 tin condensed milk
  • 1 tbsp butter
  • 1/2 Cup Baileys
  • *Note from Slow Cooker Central* – Due to the added 1/2 cup liquid I would suggest increasing the chocolate to 800g as per feedback comments below for better setting*

Instructions
 

  • Break up chocolate and put in the slow cooker, add the butter, condensed milk and baileys. Leave lid off during cooking.
  • Stir every 10 – 15 minutes for around 1 and a half hrs on low (times vary with each slow cooker).
  • Pour into prepared 20x20cm baking dish lined with baking paper and allow to set.

    Wit this recipe do u do it low or high on the sc plus can u double every thing up to make a bigger portion ?

      Some members do high for fudge and some do low but in general it’s most usually high so I’d go with that unless Simone can clarify what she did for us 🙂
      I think doubling would be ok usually but making the baileys up to 1 cup could prove watery? I’ll get more clarification from Simone for you on both for her recipe.

    Hi Jamie, yes this is cooked on low with the lid off, I’ve always done fudge on low, but again trial and error, everyone’s slow cooker is different, the sc i use for my fudge is only a 1.5l if I was using my 6ltr I would try on high as it takes forever to heat up. As for doubling the baileys with the rest of the ingredients, i would stick with the 1/2 cup and then add a little at a time until it is thick consistency but not runny. Let me know how you go ?

    Just made this with Biscotti flavoured Baileys and red and green M&Ms for decoration, used butter for extra gloss and only took 40min to cook on low in my 6L Kambrook SC – delicious thankyou!

    This is so yummy! I used 600gm milk choc melts and 140mls of Baileys. It easily fit in my 1.5lt sc and was ready to pour in the tin in 90 mins. Couldn’t stop licking the spoon lol. Brilliant fudge recipe, thanks Simone Stern 🙂

    Can you use chocolate that needs tempering or should you use the cheap stuff?

      You can use eating chocolate or cooking chocolate. I prefer the taste when using eating chocolate 🙂

    I did this with 600g white chocolate and it didn’t set. I put it back in the slow cooker the next day with another 200g block and it seems to be setting better this time.

      You could add it but I would add it in addition to existing ingredients, don’t reduce the regular chocolate for it

    Just finished making this, so easy! I used caramel baileys and a mix of dark and milk chocolate as that was what I had on hand. I’m going to take it to a NYE party tomorrow and am confident it’s going to be a huge hit!

    Do you need to leave the lid off for this one? seen other recipes that say to keep the lid off? have put a tea towel under the lid to be safe….

    YUM – taste test approved.
    I used 3/4 dark chocolate and 1/4 milk chocolate (and threw some white chocolate buttons which strangely didn’t melt so have had added texture).
    SO yum.
    Sets well in fridge overnight. I don’t think it’s a “same day” recipe.
    Christmas table treats WIN 🙂

      I cook fudge in the morning and find it only needs 4hrs in fridge and it’s good to go same day no problems 🙂
      But if you can resist eating it longer you are doing better than me hahahaha
