Cream of Celery Soup

Ingredients
 

  • 1 Brown onion chopped
  • 1 Bunch celery, leafy tops removed, chopped
  • 500g Potato peeled and chopped
  • 2 heaped Tspn minced garlic
  • 1.5ltr Massel chicken stock
  • 3/4 cup cream
  • Season with salt & cracked pepper

Instructions
 

  • Place all ingredients in slow cooker (except cream) and cook on low for 6 hours.
  • Blend and add cream, stir through and serve with crusty bread.

    Tried this tonight. It is so tasty. However if I did it again I would remove the strands from the sticks of celery before chopping. After I blitzed it, there were fibres through my soup. Simple fix and I will definitely do it again.

    Super quick and easy to make and VERY tasty. A great way to use up excess celery. Cream of celery is my dad’s favourite soup. I’ve been trying to wean him off of canned soup and he thinks I’ve hit the jackpot with this recipe. Will definitely make it again!

    I made this today. I swapped garlic for bacon and it was really good.
