Budget friendly with simple flavours. Any veggies on hand could be used. Could easily be converted to a curry by adding curry powder to the stock.

Beef and Vegetable Easy Casserole

Budget friendly with simple flavours. Any veggies on hand could be used. Could easily be converted to a curry by adding curry powder to the stock.

Ingredients
 

  • 1kg Casserole Steak - cubed (I used Gravy Beef)
  • 1 large onion, diced
  • 3 Cloves Garlic - crushed
  • 2 Carrots - sliced in rings
  • I Medium piece Orange Sweet Potato - sliced into rings
  • 1 Medium piece White (or Purple) Sweet Potato - sliced into rings
  • I head Broccoli roughly cut up
  • 10 Brussel Sprouts
  • 2 Cups of Beef Stock
  • Approx 1/2 cup Plain Flour
  • 2-3 tablespoons of Gravox Supreme powder
  • 2 tablespoons Italian Dried Herbs
  • Salt, pepper

Instructions
 

  • Make stock if using powder stock base
  • Prepare all veggies
  • Coat beef generously in flour, Gravox, and salt and pepper all mixed together
  • Add beef to slow cooker in layers alternating with veggies
  • Add stock. Quick stir to combine.
  • Cook 7 hours on Low stirring 2 or 3 times during cooking.
  • Serve with rice & crusty bread.
  • Makes 6 large serves

  1. Absolutely beautiful. Long story short….my husband and I had weight loss surgery and on minced diet. I do have to pulse blend but it is delicious. We have plenty of it left for many meals. It has all the beef and vegetables we need for our diet. Followed recipe exactly bar the rice and crusty bread

      While this one isn’t my recipe and I’ve not cooked it I’m happy to try to help 🙂
      It would be a VERY large casserole doubled so I’d definitely look at probably doing a large portion of it on HIGH first then only turning it down to low in the last hour or two.
      I’d also not double the liquid stock.
      Let us know what you did and how it went please so others will know also 🙂

  2. So here’s my update on cooking this recipe doubling the ingredients. You were so right Pauline, I ended up dividing ingredients into 2 slow cookers because there was so much,
    I did double the liquid beef stock, but as you mentioned it didn’t need it. I added extra gravy to help thicken it up, and added curry powder for added flavour.
    The finished result was delicious!
    Will definitely use this recipe again because it’s so simple and budget friendly! We’re a family of 6-7 adults so I often bulk cook so we have easy freezer meals for another day.
    Would do the same amount again as it will give us approximately 4 family meals.
    Served over mashed potato and fresh bakery bread to mop up the sauce.
    Delicious!!!
