Cheesy Potato Smash

Ingredients
 

  • 4 large washed potatoes, SKIN ON, diced (roughly cut into approx 2cm cubes)
  • 1 small onion diced
  • 2 tbsp butter
  • 2 tbsp of diced bacon
  • 1 cup grated tasty cheese
  • Cracked black pepper

Instructions
 

  • Spread potatoes across base of slow cooker
  • (the aim is to create a single layer of potato that covers the bottom of the slow cooker)
  • Scatter bacon and onion over the potato
  • Divide each tablespoon of butter into about 4 portions so that you can scatter the butter in pieces over the potato area
  • Add cracked black pepper to taste
  • Cover and cook on HIGH for 3hrs 30mins (no tea towel) or until potato is tender but not too soft
  • In the last 15-20 minutes scatter cheese over the potato smash to melt.
  • Serve straight from your slow cooker - delicious!

  2. This was delicious!! I was a bit worried that there was no liquid added, but it turned out great. I used a new slow cooker and it must cook a bit hot as mine was ready in around 2 hours. Will definitely be making this again.

  4. This is a yummy side ! I added left over bbq chicken at the end and made it dinner. Prob should have added some greens but it was very nice.

      You could do without skin but it won’t make a lot of difference to the time 🙂

Did this tonight ….I added shallots, chives, black sesame seeds and some herbs on top of the cheese ….really delicious…but a little o the soft side for us so next time I’ll do mine slightly larger …or maybe 1/2 to 50 mins less. ( ill just fork test it as its cooking ) Also I might rub the herbs into the potatoes first rather than at the end .

This recipe was so easy to make, I made as per the recipe for 3.5 hours, it was so delicious will definatley make this again, it was a big hit with my partner too, next time i might try a mix of sweet potato & potato, I love recipes like this that are simple and easy and turns out so delicious. I served this as a side with Honey Bbq Chicken

  10. Really simple and delicious. I added some ranch seasoning. I also cooked on high but only for 2 hours. My teenage son asked me to cook this again. He loves it so much. A wonderful side dish. We had ours with steak. A definite winner!

  11. Great tasty side dish. Next time I would add a bit of garlic to the butter for some extra flavour.
