Rainbow Frittata Slice (Vegetarian)
A small goodness packed frittata for the 1.5L slow cooker
Serving: 4
Ingredients
- 6 eggs. whisked
- 1 cup of grated zucchini
- 1 handful baby spinach leaves, sliced into thin strips
- 1/2 red onion, grated
- 6 cherry tomatoes cut into quarters
- A small 125g can corn kernels, drained
- Salt and pepper to season
Instructions
- Add all vegetables and salt and pepper to the whisked eggs and mix to combine
- Line a 1.5L slow cooker with baking paper
- Pour in mix and cook on HIGH with tea towel trick in place for 2hrs or until set in centre
Notes
- You can use a larger slow cooker but it will be much thinner so will cook faster. Whatever size cooker you use just be sure it's set in the centre - if it is it will bounce back lightly when touched there
- If you are following the WW Weight Watchers plan this is 0 pts on the blue program
- You can add 150g diced bacon to this also if you do not wish it to be vegetarian.

Love frittata even more now that I can make it in the slow cooker! I added cheese, mushroom, shallots and capsicum. Cooked in greenpan slow cooker and it was ready in 90 minutes. Thanks for the recipe Paulene.
