Super Moist Sultana Pud

Ingredients
 

  • 1 and 1/4 cups of water
  • 1 cup of Sultanas,
  • 1 teaspoon of bicarbonate of soda
  • 1 cup of self raising flour
  • 1/2 cup of castor sugar
  • good heaped teaspoon of mixed spice
  • 50grms of butter or marj
  • 2 lightly beaten eggs

Instructions
 

  • Boil 1 and 1/4 cups of water with 1 cup of sultanas
  • take off heat and add 1 teaspoon of bicarbonate of soda (it will froth up)
  • put in a big bowl and stir in all other ingredients
  • pop into a greased (butter or marj) 1.5lt sc
  • put a tea towel under the lid and cook on high for 1.5 hours
  • if inserting a skewer to test when done the skewer will come out a little sticky - this is done!
  • perfect hot or cold 🙂

    what would the time be for a 4.5sc as i dont have a 1.5sc lookin forward to having a go at this,
    i await in anticipation

      Hi Maree

      You could do it in another sized slow cooker but a large one like yours will of course be a thinner cake so will cook much quicker
      Just keep an eye on it for when it bounces back when lightly touched in centre or when a skewer inserted comes out clean 🙂

    I have a crock-pot express. My crockpot has gone.
    i cant use a teatowel in this one as the lid locks down and the vent is either open or closed.
    do i just put it in with the vent open?
    Do i need to put a lid on the pudding basin?

  8. Made this in my 1.5 litre slow cooker
    It was a little burnt around the edges in one area.
    I’m not sure if it’s because I kept it in the slow cooker while off for another 30mins before it was cooler and we were ready to it eat or maybe my slow cooker but hotter so needed a bit less time.
    The taste was amazing and it came out of the bowl really easy.
    I will remove it a bit earlier next time

      The 1.5L can often have a ‘hot spot’ in one area so during cooking turn the bowl around inside the cooker occasionally to spread that heat around to avoid the hot spot burning an area 🙂

  10. Hi there, my sc is 6.5, can i use pudding tins inside the slow cooker and if so will i need water? or shall i triple the ingredients? thanks it looks yummy. Hope i can find a way to make it fir my family. 🥰🌺

      I think you could just use your bigger slow cooker (line it with baking paper first to make it easy to lift out at the end also) and maybe double or triple the ingredients depending on how many you feed. Because it’s a bigger cooker and it’ll be a flatter pud the times will likely vary so keep an eye on it and be sure it’s set in middle to know it’s done 🙂 Let us know how that goes please Joanne 🙂

    I love this recipe. I cook it all the time. Sometimes in the 1:5l cooker but sometimes I cook it in a glass dish in my 5l cooker. I elevate the dish in egg rings.

    I’m wanting to make this but I only have a 5.5 litre SC and as there is just 2 of us I don’t want to increase quantities. Could I put pudding into a smaller baking tin inside the SC? Would I need to elevate and/or put water in base?

      Hi Trish – I can’t see any reason why you can’t do this in an oven proof dish or cake tin etc that it fits in sat in the slow cooker. Yes I’d start with a cm of warm water in the base to sit the container on/in just to avoid the dry cook. Times may vary a little though since the sides are no longer touching the slow cooker sides as they were in the original recipe 🙂
