Mexican chicken

Ingredients
 

  • 4-5 chicken breast
  • 1 pkt taco seasoning
  • 1 red, green & yellow capsicum, sliced
  • 1 onion, sliced
  • 200g pkt Mexican 3 cheese blend
  • Sour Cream

Instructions
 

  • Place chicken breast in slow cooker, sprinkle pkt taco seasoning over chicken breast, then layer all sliced up capsicum, & sliced onion over, cover in cheese, cook on low for 3-4 hours, serve with sour cream.

    This was really great. I didn’t add the sour cream but other than that followed the recipe.

    Yum! I added a jar of salsa instead of the capsicum and onion and used chicken drumsticks. Cooked for 6 hours on low and served with rice. Sauce was quite watery this way but very tasty! Highly recommend for your Mexican fix

    I will need an extra long bike ride tomorrow ! this is so yum I can’t stop eating it

    I made my own salsa from
    Tinned tomatoes
    Capsicums
    Onions
    Garlic
    Zucchini
    Tinned mixed beans
    Frozen corn kernals
    Smoked paprika
    Ground cumin
    A dash of chilli powder

    Then added the 2 large chicken breasts to the top with an extra sprinkle of smoked paprika and cumin
    8 hrs on low then to keep warm
    Serving as nachos over corn chips with sour cream
    Yum yum yum !

    I used thigh fillets and only cooked for 3 hours would definitely cook a bit longer in hindsight plus would add some tomatoes to make a sauce with taco seasoning

    in hindsight I think the taco seasoning I used was dodgy (not a known brand) so I’m going to give this another go with a known brand it didn’t taste Mexicany enough ….is that a word LOL
