Lamb Racks

Ingredients
 

  • 2 lamb racks
  • 1/2 cup cranberry sauce (leftover from Christmas - can use plum jam instead)
  • 1/4 cup red wine
  • 1 tbsp tomato sauce
  • 1 tbsp sweet chili sauce
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 beef stock cube
  • Juice from half a lemon
  • 1 rosemary sprig,
  • 1/4 cup dried cranberries in 1 tbsp red wine vinegar (optional)

Instructions
 

  • Season racks with salt & pepper
  • Sear racks in a hot pan (optional)
  • Combine all other ingredients in a bowl and mix well.
  • Place racks in slow cooker & pour over sauce.
  • Cook on low for 8 hours.

    really nice recipe. the marinade was nice and sticky and was a hit with whole family. I used raspberry jam as that was all I had and turned out well
