Banana Loaf

Ingredients
 

  • 2 over ripe bananas
  • - 1/2 cup brown sugar
  • 2 eggs
  • 1/8 cup oil
  • 2 cups SR Flour
  • 3/4 cup skim milk
  • Dash of vanilla
  • And a squiggle of golden syrup on top

Instructions
 

  • Mix it all in together and pop in a loaf tin inside the SC
  • No propping the loaf tin on foil balls or egg rings - straight in
  • No water in the SC
  • Tea towel under the lid
  • Took approx 1.5hrs on low in my slow cooker that cooks hot so cook until skewer comes out clean

    Love this. And so easy to make.
    I added dates though.
    Also had to put it on for an additional hour with tea towel under the lid. But that could have been because I only had a ceramic loaf dish rather than metal dish to cook it in.

    Trying this today. My first SC Baking attempt too!! Seemed a little dry while mixing so I added a dash of milk. Will send in an update again later….

    I had a flop with this cake, only because I couldn’t fit my metal loaf tin in and used the glass loaf tin, needed more than an extra hour in there and I ran out of time, the top hadn’t cooked properly before I had to leave and my low temp only has a minimum of 4 hours and didn’t want to leave it in for that long. CHECK if things will fit first people!

    Perfect. Cooked even, quite moist not gluggy at all. Mine took 30 minutes longer.
