Easy slow cooked pesto chicken

Simple, delicious and really tasty even the fussy ones should enjoy this !

Ingredients
 

  • 4-6 chicken thigh (leave whole)
  • 1 cup spinach
  • 6x sundried tomatoes sliced or cherry tomatoes work well
  • 1x tsp garlic
  • 300ml of cream
  • 1 cup chicken stock
  • 1 jar of basil pesto (recommend barilla)
  • Parmesan about 1/4 of a cup
  • Salt and Pepper

Instructions
 

  • Place all Ingredients (apart from spinach) into slow cooker and cook on high for 3-4 hours add the spinach about 30 minutes before serving just to soften it.

Notes

  • If cream splits add 1tbs or cornflour to 1-2 Tbs or water mix and pour into slow cookers and mix well and it should fix that problem. Alternatively you can add the cream when you add your spinach.
  • Serve with pasta cooked as per packet directions and a good sprinkle of Parmesan
  • I almost used a full packet of penne this made enough for 4 people

    Just starting out with my slow cooker how does everyone cook the pasta can it go into the slow cooker all day do you boil it on the stove and add In at the end? Please help

    Tried this last night and my partner and I loved it.
    I made a couple of very minor tweaks that I will definitely repeat next time:
    – Added some bacon and gave it and the chicken a light sear the start
    – Half way through the cook, added some sliced mushrooms
    – Added the cream and the spinach at the same time close to the end (as suggested as an option in the recipe)
    – Half cooked the pasta in a pot to start with and then added it in at the end to finish off.

    I have been instructed to put this on the “We must do this regularly” list !

    Really easy dish to make and totally yum. I put extra chicken in as I had 2 packs (1.7kg in total) and an extra 3/4 cup of water then I put a whole packet of pasta in 40 mins to the end and it cooked perfectly. I kept the rest of the ingredients the same quantities as the recipe and it was really tasty and made 8 portions

      For slow cooking I always use cooking cream myself Debra 🙂

    My son asked me to find a pesto chicken recipe and boy did he love it! Full of flavour! Definitely a keeper..
    I added cream with the spinach and cooked the pasta and added at the end! Yummo!

    Is the Parmesan to go in with the cooking and extra added when serving?

      You can do that yes Beth. Or stir through in the final 10mins or so. Then it’s just garnished with more I believe 🙂
