Pork Tenderloin Fillet with Honey Mustard

Soft, tender juicy pork slices cooked in a decadent honey mustard serving sauce

Ingredients
 

  • 1 - 1.5kg of pork tenderloin fillet (I used 3 long thin fillets)
  • 1/2 cup honey
  • 2T yellow mustard
  • 1T wholegrain mustard
  • To thicken: 1T cornflour mixed with 1T water

Instructions
 

  • I cut each long pork fillet into two pieces, but you can leave them whole if you prefer
  • Combine honey and mustards and pour over pork
  • Cook on low for 4.5hrs
  • Remove pork and set aside to rest while you prepare the sauce
  • Place searing slow cooker on stove top (or pour cooking liquids into saucepan on stove)
  • Add cornflour slurry and reduce/thicken over heat for 5-10 mins or until thicker and glossy
  • While sauce is thickening, slice pork fillets and then pour over the honey mustard serving sauce
  • Delicious with roast vegetables or mash and steamed veg

      I’d use whatever creamy yellow style mustard you prefer (not wholegrain mustard or mustard powder)
      I buy mine in a squeeze bottle in the sauce aisle

    Had this last night used pkt pork fillets from Safeway the gravy was delicious cooked for 4 and 1/2 hours

    I am so used to buying the marinated fillet from Aldi,unfortunately they didn’t have any so I ended up just getting a plain tenderloin. This topping was really tasty,my mistake was the piece of fillet was so thin I should have bought two,hence I over cooked it and was really not enough sliced up for dinner! Gravey from the juices was yummy!
