Winter Vegetable Curry

A spicy winter vegetable curry perfect as a quick vegetarian dinner

Ingredients
 

  • - 1 tsp cumin seeds
  • - 1.5tsp tumeric
  • - 1tbsp garam masala
  • - red chilli powder as desired
  • Salt and Pepper
  • 1tsp minced ginger
  • 1tsp minced garlic
  • 1 brown onion
  • - 4-5 tomatoes skinned and diced
  • - 4 potatoes cubed
  • - 1 can peas and corn
  • - 1 can chick peas

Instructions
 

  • 1. Saute cumin seeds until brown, add onion garlic ginger turmeric chilli and garam masala
  • 2. Add tomatoes and cook with a little water until combined
  • 3. Throw into slow cooker with a little water (enough for liquid to cover the veges) with veges and cook 4hrs on low (can also pressure cook for only 15mins)
  • Serve with rice or fresh roti (plain flour and water pancake)

  1. Hi, can i add potatoes, lentils and eggplant to this recipe. And if i can, should i pre-boil or cook them first or the time in the slow cooker will be enough?

      It already has potatoes in it 🙂 If they are cut small enough no need to pre cook.

  2. Would you put other veggies in with this other than the potatoes, peas and corn and tomatoes?

      I imagine you could add whatever you like 🙂
      I’d add sweet potato, pumpkin and carrot too
