Honey Mustard Chicken Drumsticks

The chicken should just fall off the bone its that tender !

Ingredients
 

  • 1kg chicken drumsticks
  • 8tsps dijon mustard
  • 2tbs lemon juice or apple cider vinegar
  • 2x tbs honey
  • 1tsp thyme
  • 1tsp rosemary
  • Cornflour (to thicken)

Instructions
 

  • Place all ingredients into a slow cooker and cook on high for 3 hours.
  • At the 2 1/2 hour mark preheat your oven to 200 deg.
  • When chicken is ready (it should almost fall off the bone) transfer to a baking dish and place in your oven
  • for 5-10 minutes just until the skin browns up.
  • With the sauce that's left in your slow cooker add an extra 1tsp of mustard and whisk it in. In a cup place 2tsps of corn flour with the same amount of water until it turns into a slurry then pour that into your slow cooker. Give it another good whisk and season it with salt and pepper then place your lid on and let it cook for 5/10 minutes. Do this prior to putting your chicken in the oven so it's ready at the same time as your chicken.

    Yum! Just finished eating these for dinner and are planning to cook them again in a few day for the extended family.
    My slow cooker is massive, so I am thinking of doing a double or triple batch.
    Have you done bigger batches?
    Would it change the cooking time?
    Any advise would be brilliant.

      I think it would easily double or triple by multiplying the ingredients accordingly
      For bigger batches I’d take the time up to 4hrs (still on low) myself 🙂

    I added mushrooms and a half head of cauliflour on top.I added a tsp of chilli paste to the mustard mix and poured it all over.
    I cooked these on low for 6 hrs and the drumsticks collapsed. So I separated the chicken from the bones/skin and put the meat back into the sc. There wasn’t much gravy because I used the tea-towel method.
    Then I tipped in some already cooked rice & green beans and stirred it all together.
    It came out similar to risotto. So easy & Very tasty!!!!!
