Bacon wrapped stuffed chicken and potato bake

This was purley an experiment and turned out to be a big success! Its my new signature dish!!

Ingredients
 

  • -500gms of potatoes sliced
  • -1 half brown onion sliced into half rings
  • -2 skinless chicken breasts
  • -Fresh mozzarella thickly sliced
  • -Shredded cheese.
  • -Garlic butter
  • -All purpose seasoning
  • -French onion soup mix, dry
  • 300mls Thickened cream
  • -100mls milk
  • -4 rashers of bacon, rind off with short cuts separate.
  • -Two handfulls of sliced mushrooms

Instructions

  • 1. Grease slow cooker and layer potatoes, onion and mushrooms.
  • 2. Mix onion soup, milk and cream and pour over potatoes and sprinkle shredded cheese on top.

  • 3. Sprinkle seasoning all over chicken then slice a pocket into the chicken breast.
  • 4. Place a tablespoon of garlic butter and slices of mozzarella cheese deep inside.
  • 5. Wrap in bacon strips crossed over
  • 6. Spray 2 sheets of foil with spray oil.
  • 7. Place breasts on two pieces of short cut bacon in the middle of the foil.
  • 8. Wrap firmly in the foil and place on top of potatoes in slow cooker.

Cook

  • Cook on low for 6 hours or high for 4 depending on your slow cooker.
  • Once done, unwrap and place chicken under the grill for 10 mins to crisp up a little.

  2. This was so yummy!
    The garlic butter melted down into everything, the chicken fell apart, it was great!
