Chicken with Semi-Dried Tomato & Spinach – LOW CARB

A low carb chicken recipe with semi dried tomato and spinach

Ingredients
 

  • 2 chicken breasts or 4 chicken thigh fillets
  • 150ml cooking cream (you could increase this for a saucier result)
  • 125g of Philadelphia Cream Cheese, diced into cubes
  • 50g of semi dried tomatoes, thin sliced
  • Cracked black pepper to taste
  • 50g baby spinach

Instructions
 

  • Place chicken in slow cooker
  • Pour over cream and then scatter over cream cheese blocks & semi dried tomato
  • Crack black pepper over chicken
  • Cook on low for 4hrs with tea towel under lid - The Tea Towel Trick
  • Remove chicken from pot and cube or slice
  • While chicken is out of pot whisk cream and any still solid pieces of cream cheese together to make a smooth sauce
  • Return chicken to pot along with spinach
  • Allow approx 10mins for spinach to wilt then serve
  • Low carb serving options include on a bed of spinach or on no-carb konjac pasta ?

  3. I made this tonight for my family, I added bacon, mushrooms and garlic. It turned out amazing. Even my fussy partner enjoyed it! This will definitely be a weekly favourite!!

  5. Could I do this without the tea towel? I often do these recipes in a pot in the oven.
