
Stuffing Mix Chicken Casserole
A chicken and vegetable casserole with a seasoned stuffing topping!
Equipment
- 6L searing slow cooker – or additional frypan if not searing
Ingredients
- 1 kg skinless chicken thigh fillets
- 1 small Onion diced
- 2 tbsp Cornflour
- 2 cups frozen, small diced vegetables
- 1 can Campbell's condensed chicken soup
- 1 tbsp Worcestershire sauce
- 3 tsp Minced garlic
- 1 cup seasoned dry stuffing mix – I used Tandaco brand
Instructions
- NOTE: For this recipe I seared the chicken first. Now I know many of you don't like to do that – I almost NEVER do either, so I get it 🙂 But in this recipe I didn't want the stuffing top floating in heaps of chicken juices that would form if they weren't seared first. So keep that in mind when you make your choice. I used a searing slow cooker to do this so there was no extra dishes, but if yours isn't searing you can just do this step in a pan on the stove. Ok … now that we've cleared this up, lets get on with the recipe …
- Slice chicken into strips and sear in batches. Just sear to white and sealed, no need to reach a brown colour.
- In the last batch of searing chicken, I added in the diced onion also to soften it.
- Then drain and discard any juices left in the searing slow cooker and move the cooker back to Slow Cooking setting now, on LOW.
- Before adding the chicken mix back into the slow cooker I added 2 tbsp of cornflour to the chicken and toss to coat. This will help thicken the dish as it cooks.
- Mix your frozen veg into your chicken and onion mix.
- Combine your soup, sauce and garlic and pour over your chicken and veg.
- Sprinkle your stuffing mix on top.
- Cook on LOW for 5hrs – with Tea Towel Trick in place.
- I served ours with steamed broccoli and fresh baked bread. Mashed potato would go nicely also 🙂
