Stroganoff Ragu

Beautiful creamy, shredded beef stroganoff, tossed through pasta and topped with a dollop of cream

Equipment

  • 6L slow cooker
  • Stove top to cook pasta

Ingredients
 

  • 1.5 kg beef blade steak – could also use other casserole steaks, rump steaks or even brisket cut into steaks
  • 1 large onion, sliced into thin rings
  • 200 grams button or flat mushrooms, cut chunky
  • 2/3 cup beef stock liquid
  • 3 tsp Mustard – sauce style, not mustard powder
  • 1 tbsp Worcestershire sauce
  • 2 heaped tbsp tomato paste concentrate
  • 1.5 tsp smoked paprika
  • 200 ml thick 'dollop' style cream + extra to serve
  • 2 tsp Cornflour
  • 500 gram packet of curly fettucine pasta – COOKED when added – could also use pappardelle or tagliatelle pasta

Instructions
 

  • Place onions and mushrooms in bottom of slow cooker.
  • Lay steaks on top.
  • Combine all other ingredients (except cream, cornflour and pasta) and pour over
  • Cook on low for 8hrs
  • Carefully remove steaks, shred meat and then return meat to pot.
  • Combine cream and cornflour and stir this through the meat mixture.
  • Gently toss through the cooked pasta to coat, then serve immediately with a dollop of extra cream on top. Enjoy 🙂
  • Note: Inspired from the Beef Stroganoff recipe I created for Book 7 page 119, which also has the added touch of brandy and is absolutely divine!

    The whole family gave this a big thumbs up. I used gravy beef and instead of the dollop cream used sour cream. Everyone cleaned their plates so well I might not need to wash up!!

      The stroganoff would fit in a 3L Shannon. Just mix the pasta in another bowl or serve and mix on plates 🙂
      Side note – check out a searing slow cooker in the 6L range – they are VERY light by comparison (Reviews Here)

    I found the amount of pasta to be too much compared to the amount of sauce in the dish.
    I also think it needed some garlic!

    I cooked this ragu for the first time a couple of days ago and it was absolutely delicious 😋 I used rump steak as that was what I had in the freezer and I sliced it thinly instead of shredding it. I used the Cucina Maltese Malforte curly pasta. Definitely a cook again dish!!

    So quick and easy to put together. I didn’t have smoked paprika but used a seasonal which had a touch of chilli in it. It was delicious so much so hubby did the washing up and said thank you meal was great.

    Made this for my family with 1.5 chuck roast. It was good but I will add more liquid to it next time as it wasnt saucy enough. I feel I might add less pasta as well . Salt and pepper added but nothing but the recipe was changed.
    Ill make it again and make more saucy .
