Herb Poached Chicken & Gravy

Simple poached chicken that pairs perfectly with creamy mashed potato and a roast chicken gravy!

Equipment

  • 5L slow cooker

Ingredients
 

  • 1 kg skinless chicken thigh fillets
  • 1 tsp Dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp Vegeta (stock powder) – can be substituted for chicken stock powder
  • 1 cup Water

To serve:

  • 2 sachets of prepared roast chicken gravy
  • creamy mashed potato
  • fresh parsley garnish

Instructions
 

  • Add chicken to slow cooker
  • Top with herbs and Vegeta powder (see image of Vegeta product here)
  • Pour over 1 cup of water
  • Cook on low for 5hrs
  • Remove chicken, roughly shred
  • Serve on a bed of mashed potato topped with lashings of chicken gravy and a sprinkle of fresh parsley

    I did this one but a little different – I had a whole chicken, used the same ingredients thyme, rosemary, vegeta – no water but olive oil over top instead .. it was amazing, so flavourful – Vegeta is my new favourite thing! The chicken was perfect, served over creamy mash potato & packet chicken gravy – no complaints & my Dog woofed down his own serving too .. most definitely will do again for an easy roast style meal with minimal effort 🙂

    I tried this one with a whole chicken & chicken thighs & it was absolutely amazing with both. Even my extremely fussy 4 kids absolutely loved it and have requested it again and again. I served it with creamy mash and a chicken gravy from Aldi.

    It is an amazingly easy and affordable dish to make which is very very filling.

    Omg I really enjoyed this one. I didn’t have thyme or dried rosemary so I used mixed herbs and Italian herbs and it tasted beautiful. Will definitely make this one again.
