
Thai Chicken Meatballs in a Peanut Sauce
Absolutely beautiful Thai chicken meatballs in a creamy peanut sauce straight from the slow cooker!
Equipment
- 6L slow cooker
Ingredients
Meatball Recipe
- 500 gram Chicken mince
- 1/2 cup fine bread crumbs
- 1 tbsp minced ginger
- 1 tsp Minced garlic
- 1 tbsp Soy sauce
- 1 Egg
- 1/4 tsp each of pepper and salt
- 1 tbsp fine chopped coriander
- 1/2 large red chilli (seeds removed), FINE diced
- extra coriander and chilli reserved to garnish
Sauce Ingredients
- 400 ml coconut cream
- 1 tbsp cornflour mixed into the coconut cream
- 1/2 cup peanut butter (melt 30 secs in microwave to make runny)
- 1 tbsp Lime Juice
- 2 tbsp Soy sauce
- 1 tbsp Honey
- 1 tbsp red Thai chilli paste – I use Ayam
Instructions
- In a large bowl combine all meatballs ingredients and roll into approx. 30 balls.Lay these balls gently into slow cooker, slightly apart if possible.
- Combine all sauce ingredients and pour over meatballs
- Cook with Tea Towel Trick
- Cook on low for 4hrs (separating/stirring gently after 2hrs)
- We served ours on rice with steamed green beans and lots of the delish sauce spooned over + garnish
- No need to pre cook or brown meatballs. Slow cook them from raw. Just don't stir them at all for the first 2hrs. Once you put them in leave them be. Then after around 2hrs of cooking they'll be firm and sealed and you'll be able to gently stir/move them apart or around with no risk of breaking them etc.EXTRA MEATBALL TIPS HERE!

I used beef mince for the meatballs and kept all other ingredients the same.

37 chicken balls from 500g mince!
This was yummy. I loved the sauce.
My sauce was very gluggy and I even added extra coconut cream.
I followed the sauce recipe exactly, so I have no idea why mine ended up gluggy (but yummy).
The meatballs were delicious. Next time I’ll add a little white miso and see if that balances the flavour out a little bit more.
I also found I needed more breadcrumbs in the meatballs (not sure if that contributed to gluggy sauce) and I got 33 meatballs.
Definitely one to make again.
Extra breadcrumbs would certainly absorb extra liquids and that would change the liquid balance in the sauce Liz 🙂
Made this today, followed the recipe to a tee., but may have been a bit heavy handed with the chilli paste 😂 it was delicious 🤤

I doubled the ingredients because I was cooking for seven people (I had 2 slow cookers happening) !!
Served it with basmati rice and salad !!

I found this to be an easy tasty recipe. I substituted almond meal for the flour and spices for the Thai Paste (after reading the ingredients so I knew what to add). I had to add some water near the end but that could have been my slow cooker being hotter or my substitutions.

Yum, yum, yum.
I made this with supermarket bought meatballs, the sauce is delicious. If I made it with supermarket meatballs again I would add a bit more red curry in the sauce as the meatballs didn’t have the extra flavour as if you made them as per recipe. Will definitely be making this again.

I make according to recipe apart from using a little less fresh chilli 🌶
