
Chilli
A warming belly full of chilli is a great feed for your family or your next party.
Equipment
- 5L slow cooker
Ingredients
- 1.5 kg beef mince
- 1 large red capsicum, diced
- 1 large onion, diced
- 2 x 400g cans diced tomatoes
- 400 gram can red kidney beans, drained and rinsed
- 1/4 cup tomato paste concentrate
- 2 tsps chilli powder
- 2 tbsp ground cumin.
- 1 tbsp Garlic powder
- 1 tbsp beef stock powder
- 4 squares good quality dark chocolate
- Corn chips and sourc cream to serve
Instructions
- Combine all the ingredients (except the chocolate) into the slow cooker and mix well
- Cook on low for 5-6hrs, stirring occasionally to break down any mince lumps (I like to use a plastic potato masher for a fine texture)
- Place the chocolate on the op and allow 5 minutes to melt, then stir through well
- Serve with corn chips and a good dollop of sour cream
- Notes: This one has a bit of spice to it but not overly so. To give you an idea, our then 12 and 16yr old enjoyed it but our 5yr old found it a little 'too spicy' for her. But to be fair she sometimes says that about breakfast cereal too so you be the judge hahaha. Use this as a general guide to adjust the specified chilli if you need to but to reassure you –I don’t like spicy chilli, and I loved this!

Very easy to do, the smell was driving me crazy, and it tasted lovely. I did leave out the capsicum though.
