Sweet Potato Shanks

This healthy lamb shank recipe is full of vegetable goodness! Perfect served with potato and a hearty appetite ?

Ingredients
 

  • 4-6 lamb shanks
  • Salt and Pepper
  • 1Tbsp Vegeta beef stock powder
  • 1 x 400g can diced tomatoes
  • 1 onion, diced
  • 3 celery sticks sliced
  • 1 large gold sweet potato, peeled and diced chunky
  • 1Tbsp dried parsley
  • 2-3Tbsp of gravy powder mixed with 2Tbsp warm water

Instructions
 

  • Place lamb shanks in 6L slow cooker and season generously with salt and pepper
  • Sprinkle over the dry stock powder
  • Top with tomatoes, vegetables and parsley flakes
  • Cook on low for 8hrs
  • Remove shanks and keep warm while you thicken sauces
  • Combine gravy powder with water and stir through over high heat to thicken cooking liquids – you can do this in a searing slow cooker or on stove top – it only takes 5-10mins
  • Plate shanks, spoon over the sauce and vegetables and serve with potato mash

    Could this be done with tomato’s as husband can’t have them…maybe red wine instead?

      Maybe make up that volume with part wine and part stock so they wine isn’t so overpowering perhaps?

      Yes you could Bonnie – just keep them small cut as they’ll need a little longer to cook to tender than the sweet potato did 🙂
