Cauliflower & Bacon Soup

A very filling & hearty soup with bacony goodness. Still very lean & healthy for those of us trying to eat well. My kids love this one!

Ingredients
 

  • 1 cauliflower head chopped
  • 1 leek, white part, chopped
  • 2 teaspoons minced garlic
  • 4 rashers bacon, trimmed of fat & finely chopped
  • 4cups chicken stock (real is best)

To finish--

  • 1/2 cup shaved Parmesan
  • 250ml lite cream

Instructions
 

  • 1. Place cauliflower, leek, garlic, bacon and stock in slow cooker on high for 1 hour and low for about 4 hours or until cauliflower is soft.
  • 2. Blend with stick blender to puree.
  • 3. Add cheese & stir through until melted.
  • 4. Add cream and stir through before serving with sourdough or fresh bread rolls.
  • You can replace leek with onion, cream with lactose free cream (as I do usually) and use cheddar cheese instead of Parmesan.

    This was a winner all round! Even my 4 year old loved it 😀 I didn’t add the cheese because we were dipping cheesy garlic bread into it and it was fantastic with out it. Would definitely make again.

    I needed to double the stock for this one. Probably because my cauliflower was as big as a Volkswagen Beetle, perhaps? (They were on special at Harris Farm). Tastes good though.

    Loved it! Made heaps so will be freezing the rest. Will definitely be making it again! I didn’t add the cheese tho cos I don’t like cheese and I used an onion instead of the leek as suggested but it was still yummy without it!

    I thoroughly enjoyed this and highly recommend it. I used 2 cauli’s, 1 onion instead of leek (personal choice) and added 2 potatoes, with 2.5 litres chicken stock. It was so yummy and very easy to cook.

    This was excellent. So tasty, with an onion instead of leek, plus 2 potatoes added. I will definitely make this a regular soup batch.

    Not really a fan, but maybe it was something I did? Found the parmesan kind of just went gunky, tad to garlicky & didn’t really enjoy the texture 🙁

    Loved this, used onion instead of leek, and put 1 head of broccoli in as well, was so scrumptious, no parmisan, just cream as I was blitzing
