Tomato, bacon, basil & chilli soup

Note: add more chilli for a spicy soup or less depending what you like.

Tomato, bacon, basil & chilli soup

Try this soup in your slow cooker!

Ingredients
 

  • 2 400g tins diced tomatoes
  • 5 rashers of bacon
  • Approx 10-15 fresh basil leaves
  • 2 Tbsp garlic
  • 2 tsp minced chilli
  • 1 Tbsp sweet chilli sauce
  • 1/2 cup Vegetable Stock

Instructions
 

  • Add all of the ingredients into the slow cooker.
  • Cook on LOW for 6 hours
  • Blitz with a stick blender.
  • Enjoy!

    Absolutely wonderful. Perfect for the two fussiest men in my house. Nice kick in every mouthful. Doubled the recipe to feed four. Only put 3/4 of the garlic in which was perfect for us.

  3. Made this up for the family and we loved it. Doubled the recipe and used dried chilli flakes instead of minced chilli. Even my toddler liked it

    I have made this soup a few times now. Absolutely love it. I use about 4 chillies but we like a real kick to it. Great recipe for any time of year.

  5. Made this tonight , pretty damn good and has encouraged me to go looking for more slow cooker soups on the site! I did also add half a tin of condensed tomato soup. Will definitely make again.

  6. I have 2kg of fresh tomatoes to use up. Could I add these chopped up instead of the tin?

    Will double the ingredients next time as one bowl isn’t enough as once you taste it you can’t stop!!!!.. also it certainly has a nice kick in it, Great for cold evenings.

    So good. I added a little double cream to make it more cream of…Next time I’ll use dried basil instead of fresh but other that that we all enjoyed & I will be making again.
