Sauté oil, sweet potato, onion, carrot, garlic, salt, pepper for 2-3 minutes.
Add thyme, ginger, zucchini, celery, sauté 2-3 minutes.
Add lentils, soup mix, sauté 2-3 minutes.
Add cumin, turmeric, stock, water.
Cook on high 4 hours.
Add almond milk, spinach, parsley.
Stir through.
Serve.
