One Pot Chicken Dinner
A simple, ready to serve one pot meal. This has become a go-to meal for those nights when we are going to be late and just want to serve and eat.

Ingredients
1kg Chicken, any cut you choose
500g Small Potatoes, cut in quarters
2 Carrots, cut in batons
1 leek sliced
100g Green Beans, fresh
2 Bay Leaves
6 Sprigs Thyme, remove leaves and discard stems
3 Garlic cloves
1/2 cup Cream
1 cup chicken stock
2 tblspns Cornflour
Pinch Cracked Pepper
Instructions
Place potatoes, carrots, leek, garlic, thyme and bay leaves in slow cooker bowl
Combine cream and cornflour together
Pour cream mixture and stock over vegetables
Place chicken pieces on top of vegetables, sprinkle with pepper
Cook on LOW ( Contempo 5.5L sc) for 6-7hrs
Add beans with about 1hr remaining
Notes--
We have used breast fillets, thighs, cutlets and marylands
Garlic can be left whole, sliced, minced however you prefer
Lactose free cream can be used
I have added butternut chopped in cubes with the beans before as well
