Ingredients
1-1.5kg Pork (if using a large piece cut into 4 or 5 pieces)
1 Leek, thickly sliced
150mls Cream
200mls Chicken Stock
240mls Apple Cider (see notes)
2 tblspns Cornflour
100g Green Beans
Pork Rind
Note
You can substitute 150mls Apple Juice and 90mls Apple Cider Vinegar for the Apple Cider
I buy an extra piece of pork rind from my butcher or some supermarkets sell it separately
Instructions
Place pork in slow cooker bowl with leek
Combine cream and cornflour in a jug, add stock and pour over pork
Rinse the cream mix from jug with the cider, pour into slow cooker bowl
Cook on low for 5-6hrs (Contempo 5.5L sc)
Add beans with about 1hr remaining
Cook pork rind in oven at 200°c for 15-20mins until golden
Serve with mashed potatoes or pasta and crackle
