440gramcan pineapple pieces in juice, drained and juice discarded
1smallred chilli deseeded and fine diced
2tspminced ginger
1tspminced garlic
1red capsicum, core removed and diced
1/4cup brown sugar
1/4cup rice wine vinegar
1/4cupoyster sauce
2tbspsoy sauce
Instructions
Add all ingredients to slow cooker.
Cook on low for 5hrs
If you wish to you could thicken with 1tbsp corn flour mixed with 1tbsp water and stirred through 10mins prior to serving but we didn’t feel it needed it with rice as a side dish to soak up the sauce :)
Delicious served with rice and side veg or even on burgers :)
