Sweet & Sour Pork Mince

This sweet and sour pork mince is easy on the tastebuds and easy on the wallet.
It's delicious with rice and vegetables, or even on burgers!

Equipment

  • 5L slow cooker

Ingredients
 

  • 500 gram pork mince
  • 440 gram can pineapple pieces in juice, drained and juice discarded
  • 1 small red chilli deseeded and fine diced
  • 2 tsp minced ginger
  • 1 tsp minced garlic
  • 1 red capsicum, core removed and diced
  • 1/4 cup brown sugar
  • 1/4 cup rice wine vinegar
  • 1/4 cup oyster sauce
  • 2 tbsp soy sauce

Instructions
 

  • Add all ingredients to slow cooker.
  • Cook on low for 5hrs
  • If you wish to you could thicken with 1tbsp corn flour mixed with 1tbsp water and stirred through 10mins prior to serving but we didn’t feel it needed it with rice as a side dish to soak up the sauce :)
  • Delicious served with rice and side veg or even on burgers :)
