Boiled Pineapple Fruit Cake

Ingredients
 

  • Boiled Pineapple Fruit Cake
  • 500 gms mixed dried fruit
  • 440 gms crushed canned pineapple unsweetened
  • 1 cup sugar
  • 125 mls of rum
  • 125 gms butter chopped
  • 1 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • 2 egg beaten
  • 1 cup self-raising flour
  • 1 cup plain flour
  • Nuts if desired
  • 23 cm tin.

  • Method
  • STEP 1 Place fruit, crushed pineapple, butter, sugar,rum and spices in a saucepan. Boil for 5 minutes.
  • STEP 2 Add bicarbonate of soda. Turn off heat and allow to cool.
  • STEP 3 Add eggs and flour.
  • STEP 4 Pour into a prepared slow cooker dish and cook on high 4-5 hours...this is based on my slow cooker and others will have to be guided by their own slow cooker. Use Tea Towel under lid during cooking.
  • Base of cake can be decorated with glaced cherries and pecans before you pour cake batter inif you choose as pictured :)
