Vegiful Spaghetti and Meatballs

Full of extra hidden veg to hide from your fussy kids! It’s a delicious full flavoured sauce that slightly thickens as it cooks due to the rice in the meatballs. A family favourite and so quick and easy to make.

Ingredients
 

Meatballs

  • 500gm beef mince
  • 1 med. grated zucchini
  • 1 med. grated carrot
  • 3 heaped Tbs uncooked rice
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 1 tsp salt

Sauce

  • 1 tin crushed tomatoes
  • 1 tin condensed tomato soup
  • 1 small onion very finely diced
  • 1/4 cup bbq sauce
  • 2 level tsp English or American Mustard
  • 1 Tbs Worcestershire sauce
  • 2 tsp powdered beef stock
  • 1 tsp garlic powder
  • Small handful of fresh basil or 1 tsp of dried herb of choice.

Instructions
 

  • Mix together meatball ingredients in a bowl with your hands very well until the protein of the meat changes and goes more paste like.
  • Roll into balls and place in slow cooker.
  • Mix the sauce ingredients all together in the bowl you used for your meatballs to save dishes, then pour over meatballs.
  • Cook on high 4 hours, low for 6.
  • Resist stirring meatballs until 1/2 hour before serving.
  • Serve with favourite pasta.

  • Remember to really work that meatball mix. If you think it’s well mixed, mix a bit more! It ensures your meatballs don’t fall apart during cooking. And resist stirring till the last half hour of cooking.
