Ingredients
- 500g chicken breasts (cut into bite sized pieces)
- 1/4 cup cornflour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup olive oil
- 1 medium brown onion (halved & thickly sliced or cut into quarters and separated)
- 3 cloves garlic (finely diced)
- 1/2 red capsicum (deseeded & sliced lengthwise)
- 1/2 green capsicum (deseeded & sliced lengthwise)
- 3 medium carrots (peeled and sliced into rounds)
- 1x 440g tin of pineapple pieces in juice (separate the pieces from the juice)
- 1/4 cup soy sauce
- 1/4 cup tomato sauce
- 1/2 cup brown sugar
Instructions
1. Place all veggies & pineapple pieces in the slow cooker
2. Place soy sauce, tomato sauce, brown sugar & juice from the pineapple tin in a bowl and whisk together. Pour over veggies
3. Combine cornstarch, salt & pepper in a bowl and coat chicken well
4. Heat oil in a pan and cook the chicken until browned, then transfer to slow cooker. Stir gently to combine ingredients
5. Cook for 3 hours on high or 6 hours on low
6. Serve with rice
Notes
- Cook using tea towel trick
- If you like veggies firmer, add them halfway through cooking time instead & gently stir to combine
