Ingredients
2 diced chicken breasts
3 diced potatoes
2 cups small broccoli florets
2 cups small cauliflower florets
1 cup Snow peas or frozen peas
1 cup corn
2 x 400ml tins coconut milk/coconut cream
300mls Thickened cream
1/4 cup curry powder (or less if you prefer)
Instructions
Place diced breast, broccoli, cauliflower, peas, corn and potato into the cooker
Mix together coconut milk/coconut cream and curry powder in a bowl. Use as much curry powder as desired. I use approx 1/4 cup of curry powder
Place the liquid gold into the slow cooker with the other ingredients and place on low for 6-7 hours.
Pour thickened cream in the last hour of cooking
Serve with rice
