Thai Fish Parcels
A lovely slow cooked fish parcel, also nice served with coconut rice as a side.

- 4 Salmon fillets
- 5 shallots chopped
- Handful snow peas Julienned
- 1 large carrot julienned
- 1-2 red chillies
- Handful finely sliced wom bok
- 1 heaped teaspoon grated ginger
- 1 heaped teaspoon grated garlic
- 1 heaped teaspoon brown sugar
- Juice of 1 lime
- 1/4 cup light soy
- couple drops of sesame oil
- 2 tablespoons tamarind sauce or paste
Place 4 sheets of baking paper in the bench
Arrange carrots, snow pea, chilli, spring onion and wom bok in a pile on the paper
Place the fish on top of the veggies
Mix all other ingredients together to form a sauce (the sauce can be adjusted to your liking)
Pour the sauce over each piece of fish
Wrap the Parcels up and place in slow cooker on low with lid on for 2 - 2 1/2 hours
