Take one whole chicken with giblets etc removed from cavity
Cut lemon into quarter and retain half
Place the other 2 quarters of lemon, the onion quarters, the whole garlic cloves and the thyme inside cavity of chicken
Place chicken in slow cooker, breast down
Optional: I slow cook my chickens on a chicken sling and slightly elevated from the cooking liquids on a trivet.
Then using a sharp knife make incisions over surface of chicken facing up
Mix the just melted butter with black pepper and the juice of another lemon quarter (approx 1 tblsp) and brush all over chicken and into the holes you've pierced.
The remaining 1/4 lemon can be discarded or used for garnish on the finished dish
