Ingredients
300g chorizo - cut into chunks
1 large onion - peeled and cut into chunks
2 garlic cloves - peeled and crushed
1 red pepper - deseeded and chopped into chunks
1 green pepper - deseeded and chopped into chunks
1 red chilli pepper - deseeded and chopped fine
2 tbsp of tomato purée
100 ml of vegetable stock
500g carton of passata
400g can of red kidney beans - drained and rinsed
400g can of butter beans - drained and rinsed
Either fresh of dried parsley and oregano
Salt and black pepper
Instructions
Throw it all into the slow cooker and cook on high for 4 hours.
I serve it with couscous and freshly baked banquette.
