Ingredients
1kg skinless chicken thigh fillets
3/4 cup salsa (I used Jar El Paso mild chunky tomato variety)
1/3 cup peanut butter ( smooth or crunchy)
2 tbsp fresh squeezed lime juice
1 tbsp soy sauce
1 tsp ginger
1/3 cup rough chopped peanuts
Instructions
Place chicken in slow cooker
Combine all other ingredients except nuts and pour over chicken
Cook on low for 4hrs (depending on your slow cooker)
Scatter with peanuts before serving
I served mine with brown rice, steamed green beans and broccolini and fresh lime wedges
