Thai Peanut Chicken

Ingredients
 

  • 1kg skinless chicken thigh fillets
  • 3/4 cup salsa (I used Jar El Paso mild chunky tomato variety)
  • 1/3 cup peanut butter ( smooth or crunchy)
  • 2 tbsp fresh squeezed lime juice
  • 1 tbsp soy sauce
  • 1 tsp ginger
  • 1/3 cup rough chopped peanuts

Instructions
 

  • Place chicken in slow cooker
  • Combine all other ingredients except nuts and pour over chicken
  • Cook on low for 4hrs (depending on your slow cooker)
  • Scatter with peanuts before serving
  • I served mine with brown rice, steamed green beans and broccolini and fresh lime wedges
