Ingredients
 

Peking chicken fried rice s/c

  • Peking chicken fried rice
  • Marinate 2chicken breasts Overnight

For the Marinade

  • 1 tsp garlic puree
  • 1 tsp ginger puree
  • 1 tsp chinese 5 spice mix
  • ½ cup light soy sauce
  • 2 tbsp honey
  • ¼ tsp chilli powder
  • 2 tsp red food colouring (optional)
  • 2 tsp sesame oil
  • 1 1/2 cups SunRice White Long Grain Rice
  • 3 eggs
  • 2 teaspoons sesame oil
  • 1 carrot sliced with a potato peeler
  • 3 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 2 tablespoons salt-reduced soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 cup frozen peas, thawed
  • 1 long red chilli, deseeded, thinly sliced lengthways, to serve

Instructions
 

  • Marinate 2 chicken breasts overnight
  • Cook rice for 10minutes on high in the microwave ,rice will be 3/4 cooked ,,place on a tray lined with baking paper to cool ,add a dash of turmeric powder and mix in with rice
  • Fry chicken breasts in the frypan, then slice thinly, put all ingredients in the slow cooker on low no tea towel, for 2 hrs
