12 skinless and boneless chicken thighs. Came to about 1.2 kg of chicken in total
250 chilli salami. (I used a whole knob, sliced chunky and then quartered)
2 tins of washed and drained cannellini beans
1 litre of chicken stock
1/8 red capsicum, sliced thin
3 med to lge size potatoes
1 large zucchinni
I white onion diced
I leek
I heaped teaspoon of minced garlic
2 medium carrots
Instructions
Place everything in your slowcooker except for the cannellini beans. Cook to your liking of tenderness or consistency then add the cannellini beans for the last hour..
This recipie is easily adaptable for flavours and taste and quantities. I also added just a drip or two (literally) of seasme oil before serving.
This recipie freezes and reheats awesome due to the high liquid content.
