Ingredients
Sauce:
1kg of diced pork
1 carrot
1 onion
1 tin of pineapple pieces
1/2 cup brown sugar
1/3 cup tomato sauce
1/3 cup soy sauce
1/2 cup vinegar
1/2 cup water
1 teaspoon ginger
3 tablespoons cornflour
Pork coating:
3/4 cup cornflour
3 eggs
Instructions
Coat pork in cornflour then coat in beaten egg. Shallow fry until coating is browned. This doesn't need to be cooked through and can be done in batches.
Drain the juice from the can of pineapple and retain for the sauce.
Add the pineapple to the pork in the cooker.
Mix the sauce ingredients and add to the cooker.
Cook for 2-3 hours on high
