Fry onion in a little oil until softened and add chopped apple, cumin, coriander and turmeric - stir to cook spices.
Add brown sugar and a good dash of apple cider vinegar and cook for another minute. Put onion mixture aside.
Sprinkle pork with Moroccan seasoning and mix to coat pork. Dust with flour and mix again.
Add some extra oil to the pan (or slow cooker if you have a sear function) and lightly brown the pork in two batches.
Layer the pork and onion mix in the slow cooker and pour in stock. Adjust seasoning to taste (I added a shake of cinnamon, just for fun!).
Cook on high for one hour, then turn to low and cook a further 4-6 hours, stirring occasionally.
Serve with rice, couscous or mash and veggies of your choice. I think green beans, broccoli and cauliflower would go well. :)
