Ingredients
2 chicken breast
Olive oil
1/2 cup light soy sauce
1 tsp raw sugar
1 cup fresh mint leaves (chopped)
1 cup fresh coriander (chopped)
1 tsp grated ginger
1 tsp minced garlic
Rice or mash to serve
Instructions
-Cut chicken breast widths in quarters
-Heat oil in fry pan and (very) quickly put chicken pieces in turning until white all over
-Remove chicken from frypan and place into slow cooker
-Add all ingredients in slow cooker and combine
-Cook on high for three hours
-Serve with rice or mash
