Bacon Wrapped Chicken Parmi Loaf

Ingredients
 

  • 500g Chicken mince
  • 1/2 Cup breadcrumbs
  • 200g Mozzarella
  • 2 Eggs
  • 2 Tbsp dried parsley
  • 2 Tbsp dried basil
  • 2 Tbsp minced garlic
  • 1 Tbsp Salt (see note below)
  • 1 tsp dry chicken stock
  • 10 Rashers smoked bacon
  • 1 jar dolmio bolognaise sauce

Instructions
 

  • Step 1. Mix all ingredients except mozzarella, bacon and dolmio sauce together in a bowl.
  • Step 2. Lay bacon flat and slightly overlapping each other on a board to form a rectangular shape.
  • Step 3. Shape chicken mix with hands into a loaf forn the same length as the bacon. Place in the middle of bacon.
  • Step 4. Stuff 150g of mozzarella into the middle of the loaf and seal.
  • Step 5. Wrap bacon around the loaf and place into slow cooker.
  • Step 6. Pour over the dolmio sauce and remaining mozzarella on the very top.
  • Step 7. Cook on high for 3 hours and slice into desired sizes when finished ?

Note

  • While Ruby intended it to be 1tbsp of salt, many others have enjoyed it with 1 tspn of salt instead. Personal choice which you prefer :)
