Bacon Wrapped Chicken Parmi Loaf

Ingredients
500g Chicken mince
1/2 Cup breadcrumbs
200g Mozzarella
2 Eggs
2 Tbsp dried parsley
2 Tbsp dried basil
2 Tbsp minced garlic
1 Tbsp Salt (see note below)
1 tsp dry chicken stock
10 Rashers smoked bacon
1 jar dolmio bolognaise sauce
Instructions
Step 1. Mix all ingredients except mozzarella, bacon and dolmio sauce together in a bowl.
Step 2. Lay bacon flat and slightly overlapping each other on a board to form a rectangular shape.
Step 3. Shape chicken mix with hands into a loaf forn the same length as the bacon. Place in the middle of bacon.
Step 4. Stuff 150g of mozzarella into the middle of the loaf and seal.
Step 5. Wrap bacon around the loaf and place into slow cooker.
Step 6. Pour over the dolmio sauce and remaining mozzarella on the very top.
Step 7. Cook on high for 3 hours and slice into desired sizes when finished ?
Note
While Ruby intended it to be 1tbsp of salt, many others have enjoyed it with 1 tspn of salt instead. Personal choice which you prefer :)
