Ingredients
SPONGE
200g light brown sugar
200g butter
3 eggs
200g self raising flour
Zest of 3 lemons
Juice of one lemon
SAUCE
100g light brown sugar
100g golden syrup
Juice of 2 lemons topped up to 300mls with orange juice
Instructions
Mix butter and sugar until creamy
Add and beat in eggs
Mix in flour until smooth
Fold in lemon zest and juice
Pour in greased slow cooker bowl
Put all sauce ingredients in a microwavable jug and heat for 90 seconds
Stir to mix and dissolve sugar
Pour over sponge mix
Cook on HIGH for 2 hours with tea towel under the lid - Tea Towel Trick
